From my travels I’ve concluded that most HDV’s mute their dogs. I get asked about dog grilling quite a lot. It’s a great question. I think if you could ask 100 different vendors for their opinion on grilling, boiling or steaming, you would find that cooking is the most preferred. I’ll address that to help you decide on your attack method.
Steaming
This is the process of using a drip pan that has the bottom filled with water. A perforated pan is embedded in this pan, which allows the boiling hot water to steam onto the food below.Personal Loan in UAE, New and Old Car Loan, Home Mortgage Loan, Credit Cards, Business Loan
Pros: Steam is attractive when it comes out of a trolley and allows for quick cooking of frozen foods and steaming buns. Many of the longtime Doggers use this method with great success.
Cons: Steaming can change the color of the hot dogs. It also doesn’t allow for long hold times. Too much steam and your dog will wrinkle and some dogs, depending on the type of intestine and meat, will burst and turn grey.
Boil
This method needs no explanation. Boil water, add hot dogs.
Pros: Quickly cook 30 or 40 dogs at a time. Turn off the heat when you’re done and they can sit in hot water while they await their fate. Tip: Before cooking the first portion , add a cube of beef slab or a can of beer to the boiling water. This will saturate the water with flavor and prevent the water from soaking up the dogs’ taste. A clove of garlic is also a great addition.
Cons: Often referred to as Dirty Water Dogs, I don’t see anything negative about it. I love cooking my dogs and find I have less waste and great Dampferzeuger looking and tasting hot dogs no matter the brand. However, dogs can split and burst if overcooked. 6 minutes from frozen to done is my rule, practice on your cart to get the timing right.
Grilling
Dog grilling is the most attractive and customer-friendly way of serving dogs and involves grilling your dogs over an open flame.
Pros: They seem to taste better. They are more appealing with grill marks. When grilling, smoke is produced from the droplets that hit the hot interior of the grill body . This often has a pleasant smell and can get people going.
Dogs is difficult
Cons: Grilling frozen dogs is difficult, which means you need more open and thawed broth. Grilled dogs don’t last long. If you don’t serve them right away, the skins will become tough and start to shrivel. Grilling requires more space because you can’t stack hot dogs on a grill like you can when boiling or steaming.
A grill, either brought in or attached to a cart, is great eye candy for customers. I know I just explained that boiling and steaming would be better, but if you cook and steam and then use the grill to create the flavor and atmosphere that customers love. When the customers line up I often throw my soaking wet dogs out of the simmering pan onto this super hot grill, steam and smoke rises and everything smells so good.
Bottom line, I would use a grill, but only for priming the hot dogs, not for cooking and serving.
Sausages, Italian, Bratwurst or whatever, are split lengthways and then opened up and placed on the grill, creating beautiful grill marks and adding to the delicious smells coming out of your car.
